Vegetarians and those reducing meat often worry about whether they will be able to consume optimal amounts of protein. There is little to worry about as a well-constructed vegan or vegetarian diet is replete in protein and legumes (especially if sprouted) are a great protein option.

High in protein and providing slow-digesting carbohydrates, gut-supporting resistant starches and dietary fibre, legumes provide a great mixed protein/carbohydrate base for meals. Remember though that legumes, especially if they’re not sprouted, or they’re undercooked, can inhibit mineral absorption, aggravate the gut, and promote allergies and inflammation in some people. Vary your food intake and consult a qualified, registered health practitioner if you suspect an allergy or if you experience any pain, cramping or bloating after meals.
