Pumpkin seeds are a fantastic addition to salads, stir-fries or as a snack on their own. They are relatively high in protein, zinc, and essential fats (including omega 3 fats) and can be a useful addition to meals.

I find that a handful of pumpkin seeds in the afternoon or at night can also help to provide satiety, improve sleep, and reduce sugar cravings.

A favourite, go-to vegetarian meal of mine when I’m in a rush, is salad greens (whatever I have in the fridge) chopped, drizzled with olive oil, salt and pepper, and scattered with lentil or mung bean sprouts and pumpkin seeds. So quick, simple, nutritious… and tasty.
