Eating enough vegetables is one thing…making sure we eat them at enough meals is another! It’s difficult to try to cram in six to nine servings of veggies into dinner and so, it’s important to make sure you have at least one other veggie-filled meal. This can also help you to get the most effective absorption of vitamins and minerals and to ensure optimal digestion.
I recommend in addition to eating at least six fist-sized portions of vegetables per day, to also have at least three serves of vegetables at both lunch and dinner, and breakfast if you’re able.
